The Southwestern part of Spain, Extremadura, is a low altitude plateau with abundant pastures and oak woods surrounded by high rugged mountains.
The Villuercas and Ibor mountains found in the northeastern part of the region, separate Extremadura from the center of the country. They are wild, virgin mountains, very beautiful and green, but sparsely populated. Historically, the residents of the region have dedicated themselves to farming migrating herds of goats for supplying meat and dairy products.
The cheeses, made using traditional farmhouse methods were sold each week in farmers markets in the area, mainly in Trujillo, to collectors and finishers who continued the ripening process and then resold the mature cheeses in the more populated agglomerations of the region.
In the last 15 years, these goat herders have settled and thus have been able to organize the collection of milk for cheese production in small but modern dairies.
"Denominación de Origen" (D.O.) status has been requested and is pending authorization by the Ministry of Agriculture, Fisheries and Food.
