A semi-soft sheep cheese from Cordoba, Andalucia, Spain. Like Manchego, this cheese develops a natural rind and the interior paste is an ivory white. It is produced with milk from the Merina sheep. Cordobes is smooth and creamy with a gentle sweetness. It is mild for a Sheep milk cheese. This is a wonderful compliment to any Spanish selection. Excellent both as a table cheese and for use in the kitchen. Its creamy flavor makes it a perfect melting cheese too.
